What will you learn in the Professional Chef Junior program?

Start here if you want to follow the complete Horeca Academie program:

  • Professional chef Junior (5 months) Start here if you do not have any chefs experience and/ or have not found an apprenticeship yet. 
  • Professional chef Intermediate (1 year) Start here if you already work in a professional kitchen and/or have had prior chefs experience
  • Professional chef Advanced (5 months) Start here if you already have chefs experience and have a valid intermediate chefs diploma
  • Professional chef Expert (1 year) Only start here if you have an advanced professional chefs diploma 

The Professional Chef Junior program is an entry level course.  Are you an aspiring chef with little to no experience in the professional kitchen, then you are at the right place. This is where you start your education.

We ensure you become acquainted with essential basic kitchen skills, learn the most important hygiëne and safety rules, and feel confident to apply for an apprenticeship to start your intermediate culinary program with us. Alternatively, you can begin working in the kitchen as an assistant chef.

For this Junior Chef program, it is not yet required to work as an apprentice in a professional kitchen, but it is helpful. This program is especially developed to build confidence in your cooking skills, acquaint you with the rules of professional equipment and kitchen protocols, so that you can confidently apply for your next job in the kitchen apprenticeship for your intermediate diploma.

Subjects

Throughout the 5 months tuition, you attend classes once a week. Always the same day in the week.

Classes are used for practice only, so no sitting in a classroom listening to teachers but always cooking and learning by doing. The Junior chefs course teaches you all about The Big 5. These are the most important basic kitchen skills.

The program is divided into 5 modules:

  • Module 1. Topic: Cutting and cooking techniques
  • Module 2. Topic: Broths, soups and gravy
  • Module 3. Topic: Making and preparing compositions
  • Module 4. Topic: Egg based sauces/vinaigrette and mayonaise
  • Module 5. Topic: Review of Basic techniques

When can you start

You can start our cooking courses at multiple times throughout the year. You can start with the Junior chef program in August and in February. Contact us to find out more about the admission deadline for this course.

Key information

  • 5 months | one class a week
  • €3435.- (payment plan € 687 per month for 5 months)
  • There are no additional costs. This fee includes, professional Chefs attire and teaching materials
  • Classes are approximately +/-6 hours  | between 10.30 – 17:00.
  • No apprenticeship required
  • For this course, apprentice companies or students cannot claim a subsidy for practical learning

Entry requirements:

High school diploma or equivalent, evidence of comprehension of the English language. No prior culinary experience is required. All students must be aged 16 years or over.

Visa requirements:

If you are not from Europe, you will need to apply for a visa. PLEASE NOTE; this cannot be a student visa, it must be a residence & work visa! The rules and regulations for visa are different for each country so you will need to apply for this yourself. Prior to applying for this educational program, it is necessary to hold a Dutch residence status. You can only apply for this education program with a Dutch BSN number or Residence Permit ID.

For who?

We welcome students from a variety of different educational and occupational backgrounds. No prior culinary experience is required. This program is suitable if:

You wish to enter a career working in a professional kitchen (restaurant or hotel).
Want to follow our complete Professional Chef program (Junior- Intermediate – Advanced – Expert)

What is expected of you?

  • Apprenticeship in a restaurant is not required but advised
  • A2 level proficiency in the English language
  • Follow the complete program 85% attendance to receive the certificate
  • Complete the Junior Chef Proof of Competence exam to receive the Junior Chef certificate

All Horeca Academie Students need:

  • Safety chef-shoes
  • notebook

Two start moments per year: September and February – places are limited!
