With our Professional Culinary Course, you’ll build a solid foundation in the essential cooking techniques in just 9 days. Under the guidance of our chef instructors, you’ll work hands-on in the kitchen, practicing intensively and applying what you learn in complete dishes.
What is the Professional Culinary Course?
We offer the course twice a year, in two different formats:

Summer edition – 3 weeks, 3 training days per week (tuesday, wednesday, thursday).
Locations: Amsterdam and Rijswijk. -
Winter edition – 9 consecutive Fridays.
Location: Amsterdam.
Who is it for?
This course is ideal for serious home cooks, future chef students and anyone considering a professional career in the kitchen.
What is the Professional Culinary Course?
Do you want to truly learn how to cook but not commit to a full chef’s training program? In 9 intensive training days, you will learn all the fundamental techniques at the Horeca Academie, directly from our professional chef instructors. You’ll be hands-on in the kitchen, practicing intensively and applying the techniques straight away in complete dishes.
The course is offered twice a year:

Summer – 3 weeks, with three training days per week
(tuesday, wednesday, thursday).
Locations: Amsterdam and Rijswijk. -
Winter – 9 consecutive weeks,
with one training day every Friday.
Location: Amsterdam.
Whichever option you choose, you’ll finish with a solid foundation. Perfect for serious home cooks, (future) Basiskok level 2 students, and anyone who wants to explore whether a full chef’s education at the Horeca Academie is right for them.
What will you learn?
You will work on the core skills of every professional kitchen:

Cutting and cooking techniques, mise-en-place and kitchen organization

Working with knives, products and kitchen equipment; hygiene & temperature control

Filleting fish and deboning poultry

Stocks, soups and sauces
-
Desserts: ice cream and bavarois
What does a course day look like?
Each course day is practical, intensive and follows a clear structure:

10:00 Welcome / coffee moment

10:15 Introduction and day program (by the instructor)

11:00 Start practical training

12:30 Lunch

13:00 Continue practical training

16:00 Tasting and cleaning up
-
17:00 Evaluation and looking ahead
During the tasting session, you’ll learn to give and receive feedback, helping you to improve every single day.
Guidance & certificate
The classes are taught by experienced chef instructors. You’ll receive personal guidance, practical tips and expert feedback. After completing the course, you will receive a certificate of participation listing the techniques and components you have mastered.
